Well both B & I have been getting tired of eating the same thing all the time… so I browsed through some cookbooks got some ideas & made up a yummy dinner! It was actually really easy & rather quick… we will be having it again soon! As a warning I can’t promise that I don’t make spelling mistakes as it’s past my bedtime! I will try to fix any later.
Chicken Fettucine Alfredo
Ingredients:
6 Chicken Tenders or 2 Chicken Breasts
12oz Fettucine Pasta
1 cup Fat Free Half & Half
3 tbl Margarine
1 cup Shredded Parmesan
Pepper
Garlic Salt
Olive Oil or Non-Stick Spray
Boil water & add noodles… cooking for 1-2 minutes less then the package calls for.
While the noodles are cooking cut up chicken into small 1″ or less cubes. Lightly coat a large skillet with olive oil or non-stick spray & add the chicken. Add a few dashes of garlic salt & pepper. Cook on medium high until they appear to be cooked through (cut one in half & look for pink). Turn burner to simmer & drain out any excess fat.
Add your fat free half & half and margarine to the skillet stirring until the margarine is completely melted.
Drain cooked fettucine noodles & add to the skillet along with the Parmesan cheese. Toss or stir to combine.
Continue tossing around in the pan for a few minutes to make sure the cheese is mixed in well & allow the sauce to thicken a bit.
TIME TO EAT!!! Makes approx. 6 servings.
This isn’t as creamy as the pre-made in the jar stuff, but it tastes actually tastes good, so it’s worth it. It seriously only takes a couple extra minutes to get it made… because even if you buy the easy pre-made stuff you still have to wait for the noodles to cook!
Well I hope this can tide you guys over until I can get some sewing posts up. I have got furniture in my sewing room as well as my 4 machines. Tomorrow I start moving all my STUFF in!!! Hopefully I will have some pictures of it all set up later this week… I am currently on cloud 9!
